There is nothing more satisfying than
sitting in front of the telly eating chocolate making your own basics- bread, yoghurt, cheese. And, like lots of stuff, it is much easier than you think.
This cottage cheese is miles cheaper and about a bazillion times yummier than supermarket stuff- and it needs only 3 ingredients and 30 minutes.
1200 ml milk
75 g lemon juice
1 tsp lemon juice
1/2 tsp salt
Heat milk to just before boiling- take off the heat the second you see the first little bubble. Add main bit of lemon juice, stirring slowly until it separates into curds and whey. (Curds and whey, hehehe, how folksy!) Leave to cool completely then drain in cheese cloth (you have one of those right?! Hehe, just kidding, use a muslin/ thin bit of cloth/ fine siv) for 30 minutes. Pour into bowl, add 1 teaspoon lemon juice and salt. Light, creamy fluffy cottage cheese perfect for a jacket potato!
