When I was 12 I visited Italy with my family. There we visited the Leaning Tower of Pisa, we gawked at most spectacular renaissance art the world has to offer and there I also had my first kiss.
However, the most amazing part of that trip, and the bit that I think of most, is definitely eating fried pasta.
Out of this world.
We were at a camp high in the mountains and we stuffed our faces with simple, rural Italian tucker.
It was common to have stacks of leftover pasta (as it is in my own home now) and the second or third day after it was originally served it would come out for a second appearance, fried.
And it is simple to recreate.
Take all the left over penne you have, stir in the extra sauce (bolgonaise or pesto works well) and store it in the fridge.
When ready simple heat up a couple of table spoons of olive oil in a large frying pan. Throw in your saucy pasta and FRY! It will take a good ten minutes as you really want a nice brown cruncy pasta. For the last minute or so chuck in some crushed to taste and some salt and pepper. Serve with a lovely big salad.
